This week I’ve been honing my pancake skills and I’m giving away my best recipe for you to try for yourself.

Protein rich powerhouses

When you make your pancakes the right way, they can be a great source of protein. Protein is vital since it’s the building block of muscle cells so get your protein in like there is no tomorrow. As long as your pancakes are a protein rich powerhouse, you can have them for breakfast every day, not just on pancake day. In fact, I wholeheartedly recommend it!

The recipe

You will need:

60 g buckwheat flour
60 g yellow pea flour
2 tbsp Arbonne vanilla or strawberry protein powder
1 egg
190 ml almond milk
½ teaspoon baking powder
½ teaspoon bicarbonate of soda

Whisk everything together in a blender. It’s best to make it a few hours ahead of time and let it rest in the fridge before you use it but you can use it straight away if you can’t wait that long! It keeps well in the fridge for a few days.

Heat an empty frying pan, then add some coconut oil or ghee and let it get really hot before you add the mixture. Leave to cook until you start to see bubbles forming before you turn the pancakes over to cook briefly on the other side.  Top with coconut yoghurt, berries, pumpkin seeds and melted dark chocolate for extra antioxidants.
